Today David decided to try his hand at home made cheese!
He made mozzarella and some ricotta.
He estimates he got about 2 lbs of mozzarella from 2 gallons of milk. The ricotta is made from the left over whey, and he only got a bit. I am going to find something yummy to make with it though.
He read that the whey left over after the ricotta can be used to make mysost "whey cheese" that is eaten in Norway. I guess it is sometimes called gjetost. He also read that it's one of those things that you either really like or really hate... so we will have to see!
